  • 5% vinegar - 50 grams
  • Black peppercorns – 3-5 pieces

All ingredients except vinegar are mixed, boiled for 25-30 minutes over medium heat, then fresh chopped champignons are dipped into the brine. Vinegar is added to the cooled brine, after a day the product is ready for use. Marinades are stored in the refrigerator.

Drying

Drying is an ancient method of preparing food for the winter. In dry form, mushrooms can be stored for more than a year: the champignons are washed, peeled and soaked in cool water for 2.5 -3 hours. Then they are cut into plates at least a centimeter thick, placed on threads, hung or laid out on baking sheets or wire racks. There should be some distance between the pieces. After a few days, dried in a ventilated and dry room or oven, the mushrooms can be stored in jars or paper bags.

Before cooking, mushrooms are soaked in cold water for a few hours. After this they will be as fresh, without losing their taste.

Pickling

Can be prepared for the whole winter fresh champignons, if you salt them by first cutting them and boiling them for 5-7 minutes in a salt solution. For 5 liters of water you will need 4-5 tablespoons of salt. Boiled mushrooms are removed from the water, cooled and placed in an enamel pan in layers. Each row is sprinkled with salt, you can add dill and garlic. The salting is covered with a clean cloth, followed by a plate or an inverted lid, smaller in diameter than the pan, and pressed down with pressure.     Another excellent method for storing champignons is drying. You can dehydrate mushrooms either naturally or in an oven or special dryer. Rinse and clean the mushrooms thoroughly.     Most long-term storage champignons are achieved by salting or marinating. In this case, you can not only solve the storage problem, but also get an excellent snack. Marinating begins with boiling the brine. Prepare the marinade at the rate of 1 tbsp. salt, 1 tsp. sugar, 5 peas each of allspice and black pepper, 1–2 bay leaves per 1 liter of water. Bring the brine to a boil, place the mushrooms in it and cook for about half an hour. Cool the champignons in the marinade. Then add 50 g of vinegar, place the prepared mushrooms in sterilized jars and roll up. It is better to store such preparations in the refrigerator or cellar. Shelf life depends on temperature and can reach two years.

    The choice of method for storing champignons depends on what exactly you plan to cook in the future. So, when preparing mushrooms for juliennes and main courses, it is better to use freezing.
